…and then I died.
We had one particularly fabulous day of weather in Washington. I met up with my BFF Maria at lunch for some awesome convo and tea.
I’ve had green juice before, but this was my first time making it myself. I used kale, spinach, cucumber, celery, an apple, half a lemon, half a lime, 1/2 an inch of ginger, water, and a bit of honey. I also strained out most of the pulp because it was just a little too much for me. Overall, it was really good, and I’ll be making it again.
I made chicken chile verde burritos for dinner, they were pretty bomb if I do say so myself (it has taken very long and many failures to finally be able to say that). This week I became mildly completely obsessed with cooking. In particular, with Mexican food. I don’t know what it is, but there’s a little old Mexican lady inside me who I guess is dying to get out. So far I’ve made everything from a rice and bean bowl (more Cuban inspired, actually) to chiles rellenos to three different types of salsa. I did take a detour yesterday to Italian and made two different types of pizza: one was sausage, mozzarella, and arugula and the other was prosciutto, mozzarella, and arugula. Some people get their energy out with exercise, and I can definitely say that cooking is a workout, because I am BEAT.
