I made another frittata– this time with eggs, ham, jack cheese, shallots, and spinach. The key to making them fluffy is adding milk to the eggs when you whisk them!
I know dandelions are technically weeds, but I love them. I don’t know if this is true for everyone, but I grew up thinking that if you blew all of the little seedlings off at once, your wish would be granted. So now they symbolize wishes to me.
Oven baked sweet potato fries are REALLY easy to make. Cut up your potatoes into fry-size pieces, drizzle with olive oil, salt and pepper them, and cook at 450 degrees for 10-15 minutes on each side (depending on how crispy you like them– longer is crispier). If you wash the potatoes before cutting them, make sure they are BONE DRY before doing so. Otherwise, your fries will be soggy. Personally I just wipe them off with a paper towel if at all.
I stopped in for a mid-week pick-me-up at Chocmo, which is a nice chocolate cafe nearby. The owner started making and selling chocolates when he was just a teenager, which I think is really cool. I especially like it too because it’s the only cafe around that’s open until 10pm (which is late for this town!).
I got this little jar for my flakey sea salt for less than two dollars (at Central Market if you have one nearby), and when I excitedly told my brother this he just looked at me like I had lost my mind.

This week was just really simple. From using up ingredients that we have at home instead of going out to the grocery store for more, to sipping on tea at cafes, to strolling the aisles at the bookstore, to re-watching some of my favorite movies– it was just a nice slow pace. I definitely love me some adventure but sometimes it’s nice to just take part in the simple pleasures that life has to offer.
